A commercial dough moulder is an essential bakery machine that automates the shaping of divided dough into consistent loaves, baguettes, or rolls by flattening, rolling, and stretching it. Operating on a standard 0.75 kW to 1.5 kW motor (220V/380V), these 200 kg to 250 kg stainless steel units process 1,000 to 3,000 pieces per hour [0] for dough weights ranging from 30 g to 1,200 g. The process begins as an infeed conveyor guides dough through adjustable, non-stick Teflon or stainless steel rollers to sheet out excess air. Next, a curling chain rolls the sheeted dough into a tight log before a pressure board moulds it to a maximum length of 300 mm to 650 mm. Built for high-volume efficiency, safety, and hygiene, the machine features scrapers and emergency stops to ensure identical baking results with minimal manual labor.
